About The Yard Restaurant:
Offering a unique Food and Beverage experience for our guests, thanks to Robin Gill 's expertise, The Yard is the unique flagship restaurant of the hotel operated by Robin Gill and team. This restaurant will focus on the best of what the British seasons has to offer. Engaging the consumer from the very start to produce memorable experiences through sincere, authentic service and extraordinary food and drink. We ensure produce is always of the highest quality, this restaurant throughout breakfast, lunch and dinner will showcase Britain's varied landscape at its best. Everything is made in-house wherever possible: from charcuterie and bread to jams, juices, ferments & pickles.
About the role:
As a Head Sommelier, you will produce a menu that is industry leading and that displays a varied offering across both old and new world wines. Some of the key processes include but are not limited to:
To ensure that the wine offering has a unique nature and stands out from the crowd, this will require an incorporation of natural and low intervention wines
To assist in the preparation of gross profit percentages, the monthly reforecast of revenues and costs
To maintain and take care of all stock, through ensuring correct temperature control and storing procedures
To align your vision of wine offerings with the style of food being displayed
To create a good rapport with suppliers and brands to create an individualized menu while maintaining good P&L
To always be willing to provide constructive feedback on the food/beverage offering. Have an opinion and give reasons for your viewpoint to ensure progression About you:
You must have previous experience in a similar role in a high-end brand and be able to display a large, very detailed array of wine and beverage knowledge
Your wine knowledge should incorporate all trends and regions
You should have a clear idea of what do we offer as a brand and how can you integrate your unique and inspirational approach into that
You need to have great relationship skills as you will be working in close partnership with the general manager and head chef
You must have a real passion for wine and other beverage offerings, and to constantly be raising your own knowledge and awareness
We expect you to be approachable, good humoured and display a good understanding of the varying demographic of our customers
